Dr. Libby’s Orange Chocolate Tart–U.S. style

This is heaven if you are a chocoholic! I have no shame in admitting my weakness for chocolate, and if I can make it packed with nutrients, then that’s just the best of both worlds!

Don’t get me wrong, this delicious chocolate thing is decadant!  As in calorie dense and rich.  This is reserved for small portions.  I tried to make individual portions in mini muffin cups, but I ran out of patience (only got to 4).

Four lucky chocolate lovers will get to sample these tomorrow and thursday at Venus!  YUM!

As I said, I took this recipe from Dr. Libby’s Real Food Chef Cookbook.  She has AMAZING recipes and explains some of the nutritious benefits of the food.  She is great at showing how nutritious food can be beautiful and delicious (we need a restaurant that cooks like this!!!).  You can find her cookbook and other books at this US link or at her website (but she is in New Zealand so shipping is expensive).  Go to her website, because she has some great online tools as well as wonderful info and other recipes (my fave is the pumpkin pancakes!!)

Here is the recipe as I made it:

In a high speed blender or food processor:

4 drops of wild orange essential oil, 1/2 cup coconut oil melted and cooled, 2 1/2 cups raw cashews (it would be better if they were soaked in water for 30 minutes or so–makes the filling super smooth!!! cashews are GREAT for that), 1/2 cup maple syrup, 3/4 cup raw cacao powder, 3 Tbsp water (if cashews not soaked).

In a food processor, separate from the above filling:

1 cup walnuts, 1/2 cup shredded coconut, 1/4 cup raw cacao powder, 1/4 cup cacao nibs, 5 fresh pitted dates, 1 Tbsp sesame seeds, 1/2 Tbsp water.  Blend to a fine crumb. Press into a tart pan.  You can also press into a bar pan and make bars/cookies.

FREEZE until chocolate filling is firm to touch.

You can use any leftover base mixture to make energy truffles (a nice thing to bring to a buffet during the holidays).

This cake contains omega 3 fatty acids, magnesium, and calcium.  Raw cacao has many many beneficial nutrients, including theobromine, which is thought to help blood vessels dialate and lower blood pressure.
